  • In the bowl mix dry ingredients then in a separate bowl mix liquid ingredients. Blend both together and add additional Milk if thinner pancakes are desired. Cook on griddle until golden brown. I like sprinkling crushed walnuts or granola on the wet side of the pancakes while grilling.
  • Makes 24 – 30 pancakes. Freeze the rest and take with you for a low glycemic snack.
  • Note – if you don’t have Pumpkin spice, simply mix (4) tsp of cinnamon and (1) of all spice in the dry ingredients
