
PB Apple Pancakes

Ingredients
- 1 cup flour (or 1/2 cup whole wheat flour, 1/2 cup AP flour)
- 1 tsp swiig Cinnamon
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/4 cup swiig PB Lite
- 1 large egg
- 1 tbsp Vinegar (we used Apple Cider Vinegar)
- 2 tbsp Honey
- 2/3 cup Almond Milk
- 3/4 cup Apple Sauce, unsweetened
- 1/2 tsp swiig Vanilla Extract

Instructions
- In a medium-sized bowl, whisk together the flour, cinnamon, baking powder, baking soda, salt, and PB Lite
- In a separate small bowl, whisk together the egg, vinegar, honey, almond milk, apple sauce, and vanilla extract
- Slowly pour the liquid ingredients into the bowl of dry ingredients
- Gently stir the mixture together, until lumps are mostly gone
- Let mixture sit for 5 minutes
- Grease skillet with light coating of oil or butter
- Pancakes are ready to flip once the edges start having little bubbles appear
- Serve & enjoy! These pancakes are best enjoyed with a drizzle of reconstituted PB Lite or a drizzle of honey
